Cheese Bistro & Cheese Shop 

New World Cheese is a cut-to-order retail cheese shop carrying about forty cheeses, charcuterie and accompaniments. We also have a cheese bistro serving cheese plates, cheese tapas, mac and sandwiches and adult beverages to match. We also cater, build cheese trays and offer on-line options such as cheese-of-the-month memberships.

Happy Hour Every Day we're open from 3:30pm to 6:30pm

When St. Peter first worked in a cheese shop in the early 1990s there was very little small batch specialty cheese available in the U.S. She spent some years away — but not too far — from cheese as a public servant, mostly within Denver’s City Council. Finally figuring out what she wanted to be when she grew up — and with enthusiastic encouragement by her beau Gideon, family and friends -- St. Peter began an unofficial master’s degree in the school of American craft cheeses and business. Thus was born New World Cheese.

An urban planner by trade, a former journalist, a recovering New Yorker, Berger is the man behind the scenes at New World Cheese, hoping it all pays off one day by giving him back a happy and fulfilled life partner (Teresa), a beloved neighborhood institution, and a thriving family business. As cheese consigliere, he is learning all he can about the business side from Teresa, whom he met while the two worked for the City and County of Denver: he in city planning, she in city council — a classic case of urban-planning unforeseen outcomes, but this one was hidden between the lines of the 38th & Blake station area plan.
